One of the best things about welcoming summer is changing up the menu, and using the barbecue!
We’re excited to share a recipe from Sabrina Lamontagne, daycare cook for Les Petits Amis Childcare Centre at the KMFRC.
Les Petits Amis Childcare Centre’s Favourite BBQ Sauce
2 cups ketchup
8 tbsp vinegar
1 tbsp Worcestershire sauce
2 cloves garlic, minced
Put all ingredients in a pot on the stove, and simmer on low for about 8-15 minutes or until the sauce thickens. For a more caramelized taste, you can add ½ cup of molasses. You can also add a few dashes of your favorite hot sauce or spice. Enjoy!
Here is another great dish for summertime – it’s easy to make for your own family, or take to a potluck!
Grilled Potato Salad (adapted from a “BBQ Pit Boys” recipe)
4 medium OR 10-12 small potatoes
4 slices smoked bacon, chopped
1 clove garlic, minced
2 tbsp parsley, finely chopped
¼ cup sweet onion, finely chopped
1 tbsp Dijon mustard
1 tbsp maple syrup
½ cup balsamic vinegar
½ cup extra virgin olive oil
Salt and pepper to taste
Prepare your grill for indirect heat, with hot coals on one side and none on the other side, aiming for a grill temperature between 375 and 400 degrees Fahrenheit.
Coat the potatoes with olive oil and place on the side of the grill with no coals.
Cover the grill, with the top vent of the lid directly over the potatoes.
Cook for 50-60 minutes.
In a jar or container, place the following ingredients and shake to mix:
½ cup balsamic vinegar
½ cup extra virgin olive oil
1 tbsp Dijon mustard
1 tbsp maple syrup
1 clove minced garlic
Salt and pepper to taste
After the potatoes have cooked, take them off the grill and allow them to cool until they’re slightly warm to the touch. Cut the potatoes into bite-sized pieces.
In a bowl, mix the potatoes, bacon, onion, and parsley. Shake the vinaigrette and pour it over the potato salad. Stir well, then dig in!
